Lentil Croquettes – Keftethes me Fakes

Ingredients:

  • 1 cup of bulgur washed and drained
  • 1 cup of red lentils washed and drained
  • 1 large onion finely chopped
  • 1/2 cup of olive oil
  • 1 tbsp of tomato paste
  • 2 tbsp cumin
  • juice of 1 lemon
  • 1 tsp of salt
  • Pepper to taste
  • 1/2 cup of parsley, chopped

Lentil Croquettes – Keftethes me Fakes

Method:

  • Wash the lentil under plenty of running water.
  • Place lentil in a pot with 2 1/2 cups of water and cook on low heat.
  • In the meantime wash and drain the bulgur.
  • Add the bulgur in the pot with the lentil stir to mix and cook until all the water is gone.
  • Remove the pot from the heat, cover the pot with a kitchen towel and set aside.
  • In another pot pour the olive oil and sauté the chopped onion.
  • Add the tomato paste, lemon juice, salt, pepper to taste and gamin.
  • Stir well for the tomato paste to dissolve and mix with the rest of the ingredients.
  • Add the lentil and bulgur mixture and stir well to mix with the all the ingredients in the pot.
  • Cook on low heat, stirring occasionally for about 8-10 minutes until the mixture becomes doughy and starts to leave the sides of the pot.
  • Cover the pot and put aside for about an hour.
  • Mix in the chopped parsley by using your hands and give them the shape shown in the picture.
  • Place in the refrigerator to cool them down.
  • Keftethes me Fakes (Lentil Croquettes) can be eaten as an appetizer, side dish or they can be served on green leaves salad.
