Squid with Spinach – Calamari Me Spanaki

  • Squid recipes with Spinach, or Calamari Me Spanaki as it is known in Greece, is a popular and favourite dish in Greece. Cooking squid with spinach creates a delicious, tasty and healthy meal.
  • Serve with a crisp, green salad, plenty of fresh crusty bread and extra lemon wedges. In winter, serve this squid recipes with Spinach with a salad and a serving of rice.
  • Cooking with wine helps to tenderise the squid.

Raw-Squid

Ingredients:

  • 1kg fresh squid
  • 500g fresh spinach
  • 1 large onion, chopped
  • 3 spring onions, chopped
  • 120 ml extra virgin olive oil
  • 175 ml white wine
  • 150 ml hot water
  • 3 tblsp fresh dill, chopped
  • juice of 1/2 lemon
  • freshly ground salt and black pepper

Preparation:

  • Try to buy small squid as they are more tender than the larger ones.
  • Clean the squid thoroughly inside and out and then drain.
  • Cut the body in half lengthways and the slice the body into 1cm strips.
  • Cut the tentacles into smaller slices as well.
  • Using a large non-stick heavy pan, heat the oil and fry the onions until they start to take a colour.
  • Add the squid and stir.
  • Cook for about 10 minutes until they turn a golden colour, stirring from time to time.
  • Pour in the wine, stir and let it evaporate slowly.
  • Add the hot water and salt and pepper.
  • Cover and cook for another 30 minutes, stirring occasionally.
  • Wash the spinach and drain, shaking off any excess water.
  • Cut off any stalks and chop the spinach roughly.
  • Add the spinach to the pan and stir in.
  • Once the spinach starts to wilt, cover and cook another 10 minutes.
  • Add the lemon juice and dill and mix together well. Serve.
