Psari Savoro me Tomates (Mullet in Savoury Tomato Sauce)


  • 1 kg of small fish (red mullet)
  • 4 tbsp of flour
  • 2 ripped tomatoes grated
  • 1/2 a cup of wine vinegar
  • 5-6 tbsp of olive oil
  • 1 cup of water
  • 3 garlic cloves chopped
  • 2-3 springs of rosemary
  • 1 bay leaf (optional)
  • Salt and pepper to taste
  • Flour & olive oil for frying

  • Clean and wash the fish under plenty of running water.
  • In a deep plate mix the flour with salt and pepper to taste.
  • Take one fish at a time and deep it into the flour mixture making sure that is very well coated.
  • Ones all the fish are coated with flour; fry them in hot olive oil until golden brown on both sides.
  • Place the fried fish into a baking pan one beside the other.
  • In a clean frying pan, heat up the 5-6 tbsp of olive oil; add the 4tbsp of flour and stir until is dissolved.
  • Add the vinegar, rosemary, chopped garlic, bay leaf, grated tomatoes and water.
  • Stir until is boiled and until a batter is formed.
  • Pour the battered mixture over the fish and bake in a preheated oven at 350 degrees Fahrenheit for about 10-15 minutes.
  • Remove from the oven, let it cool down and refrigerate.
