Kotopoulo Kaourmas (Chicken Casserole)


  • 1 Medium chicken cut in quarters
  • 6-8 peeled potatoes cut in quarters
  • 2-3 zucchini cut in 3 pieces each
  • 5-10 whole small onions
  • 1/2 cup of olive oil
  • 1 cup of white dry wine
  • 1 cup of hot water
  • 2-3 ripe tomatoes cut
  • 1 1/2 tbsp of tomato paste
  • 1-2 bay leafs
  • Salt and Pepper to taste

Kotopoulo Kaourmas (Chicken Casserole)


  • Heat the olive oil in a casserole and fry the chicken to light brown on both sites.
  • Remove the chicken and sauté the onions for about 3 minutes while stirring.
  • Remove the onions and do the same with the potatoes and the zucchini.
  • After you sauté the chicken, onions, potatoes and zucchini put everything back in the casserole mix them up and add the wine.
  • Bring to boil and add the rest of the ingredients.
  • When it comes to boil, reduce the heat, cover the casserole and simmer for about 45 minutes.
  • At this point the sauce should be thickened and you food should be ready to serve.
  • Serve hot with a glass of red dry wine.
