Grilled Squid – Calamari sti Skara

Ingredients:

  • 2 lb cleaned calamari tubes
  • 8 minced cloves of garlic
  • 1/2 cup olive oil
  • 1 tsp lemon zest (lemon peel grind)
  • 6 tbsp lemon juice
  • 4 tbsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • Chopped parsley for garnishment
  • Lemon wedges

Grilled Squid – Calamari sti Skara

Method:

  • Clean and wash the calamari under plenty of running water.
  • Using paper towel dry the calamari from excess water.
  • Place calamari and tentacles (if any) in a large enough bowl to fit all of them.
  • Before placing the calamari tubs into the bowl, score the top layer crosswise about 2 inches apart.
  • In another bowl pour the olive oil, lemon juice, lemon zest, oregano, salt and pepper and whisk well to mix all the marinating ingredients.
  • Pour the marinating mixture over the calamari and stir them or move them around for the mixture to coat all of them.
  • Cover the bowl with plastic wrap and refrigerate for 30-60 minutes
  • Preheat your grill on high and before placing the calamari on it, make sure they are coated with the marinating mixture.
  • Cook, turning them once for about 2 minutes or until they are firm.
  • It is important not to overcook the calamari because it can get toughened up.
  • Remove from the grill, place in a platter and pour some olive oil over them, followed by some fresh squeezed lemon and chopped parsley.
  • Garnish with lemon wedges, sliced onions, tomatoes, cucumbers and serve while they are hot.
  • Calamari sti Skara (Grilled Squid) is an excellent appetizer or it can be served as a side dish, or as a main dish accompanied with some Skorthalia.
