Greek Rice Pilaf – Pilafi Rizi

Ingredients:

  • 1 cup of rice
  • 2 cups of hot water or broth (in place of broth mix)
  • 1 tbsp of chicken broth mix (in place of broth)
  • 1 medium size onion very finely chopped
  • 1 red pepper very finely chopped
  • 1 celery stick very finely chopped
  • 2-3 tbsp of olive oil
  • Salt and pepper to taste

Greek Rice Pilaf – Pilafi Rizi

Method:

  • Pour the olive oil in a sauce pan to heat up.
  • Add the chopped onion and sauté until is soft and translucent.
  • Add the chopped peppers and celery and sauté for a few minutes.
  • Add the 2 cups of hot water and broth mix or 2 cups of chicken broth and stir to mix with the vegetables.
  • In the meantime, wash the rice under plenty of running water.
  • Add the rice to the sauce pan with the vegetables and broth, add salt and pepper to taste and stir to mix all ingredients.
  • Pour the rice mixture from the sauce pan into a baking dish and spread it out.
  • Cover the baking pan with aluminum foil.
  • Bake in a preheated oven at 350 degrees for about 35-45 minutes or until all the liquids are absorbed by the rice and the rice is cooked.
  • 1 cup of rice makes 2 servings accompanied with something else.
  • Adjust the ingredients for more servings as long as you have 1 part of rice to 2 parts of broth.
  • Greek Rice Pilaf can be accompanied by a lot of other Greek dishes like Grilled Chicken, Fish,, Stake, Soutzoukakia, a Greek Salad and most of all, Greek plain Yogurt.
