Flaming Prawns – Garithes me Ouzo

In Greek: γαρίδες με ούζο, pronounced ghah-REE-thes meh OO-zo

Flambé dishes are always fun and this is no exception. When shopping for prawns, look for those that are sold 5 to the pound. These may also sold as “extra colossal” shrimp.

Total Time: 10 minutes

Ingredients:

  • 5 prawns, 1/4 pound each
  • 1 cup of carrots, coarsely grated
  • 1 cup of zucchini, coarsely grated
  • 1/4 cup of heavy cream
  • 2 tablespoons of ouzo
  • 2 tablespoons of olive oil
  • sea salt
  • freshly ground pepper

Preparation:

Clean and devein the prawns, leaving the head and tail intact.

In a heavy-bottomed frying pan, heat the oil and sauté the prawns for 3 minutes. Add carrots and zucchini and continue to sauté for 2 minutes more.

Add the ouzo and light it. As soon as the flames go out, add the cream, salt, and pepper, and stir until the sauce melds and thickens. Remove from the heat and serve.

Yield: 5 servings

Serving suggestion: Serve with linguine pasta and a crisp green salad for a delightful meal.
