Chirino me Manitaria (Pork Ribs with Mushrooms)

Ingredients:

  • 1 kilo of pork ribs cut in small pieces
  • 1 lb of mushrooms cut in quarters
  • 1-2 tbsp of flour
  • 1/4 cup of olive oil
  • 2 large onions chopped
  • Finely chopped parsley
  • 1 1/2 cup of red dry wine
  • Salt and pepper to taste

Chirino me Manitaria (Pork Ribs with Mushrooms)

Method:

  • Wash the pork ribs and season with salt and pepper to taste.
  • Coat pork ribs with flour.
  • Cut the onions in half, turn flat side on the board and slice.
  • Clean mushrooms and cut in quarters.
  • Heat up the oil in a pan and fry the pork ribs on all sides.
  • Add the onions and mushrooms, season to taste and fry until the onions are translucent and mushrooms are soft.
  • Add the wine, lower the heat, cover the pan and simmer for about 1 hour or until a thick sauce is formed.
  • Stir occasionally to cook ingredients well from all sides.
  • Place in a platter and garnish with chopped parsley.
  • Serve Chirino me Manitaria (Pork Ribs with Mushrooms) hot.
  • Chirino me Manitaria (Pork Ribs with Mushrooms) can be accompanied with boiled vegetables, mush potatoes or anything else you desire.
