Koulourakia Ouzou: Traditional Ouzo Cookies

In Greek: κουλουράκια ούζου, say: koo-loo-RAHK-yah OO-zoo

The flavor of these cookies is Greece. The flavor of the ouzo is intensified with the addition of ground anise and coriander to create a taste that works as an appetizer, snack, or dessert. The cookies are made with olive oil, a Greek tradition as well.

Ingredients:

  • 1/2 cup of olive oil
  • 1 cup of sugar
  • 2 eggs
  • 1/4 cup of ouzo
  • 1/2 teaspoon of ground anise and coriander (combined)
  • juice of 1/2 lemon
  • 5 1/2 cups of all purpose flour
  • 1 teaspoon of baking powder
  • a pinch of salt
  • sesame seeds (optional)

Preparation:

Preheat oven to 390°F (200°C).

In a mixing bowl, beat together the oil, sugar, and eggs until light and creamy.

Beat in ouzo, anise and coriander mixture, and lemon juice.

Whisk together flour and baking powder, and add to the mixture, kneading in the bowl until the dough is smooth and elastic, and doesn’t stick to the sides of the bowl.

On a work surface with oiled hands, roll small pieces of dough out in strips and twist or coil to form cookie shapes.

Optionally, roll strips through a few scattered sesame seeds before forming the cookies.

Place cookies on lightly greased or nonstick cookie sheets and bake at 390°F (200°C) for about 30 minutes.

Yield: about 100 cookies
